My Kid The Picky Eater

My toddler has steadily become a terribly picky eater.  I can’t seem to get him to eat hardly anything that isn’t peanut butter, cereal, or fruit.  I mean, it’s not like he only wants chips or candy or anything, but a growing kid just can’t get enough nutrients on that kind of diet.  So I’ve been trying a variety of things to nip this in the butt now, and for breakfast today I decided to make it a little more exciting…

J has always been a fan of egg and banana pancakes (literally, those are the only two ingredients), so as I was mashing the banana, I thought I would try adding a few things to give them a little more substance and go further (since I only had one banana)  So taking a chance, I added almond and flax meal, coconut oil and vanilla flavored rice based protein powder.  The pancakes cooked up fluffy and just sweet enough that I didn’t have to worry about adding syrup with them (always preferred).

He of course didn’t show any interest at first, and continued to beg for cereal.  So I pulled out my cookie cutters and everything changed.  At first he was only interested in making the shapes, but it didn’t take long before he took a bite out of one (which was all it took, because they were yum).  He downed the whole batch (leaving me to fend for myself).

I’ve got a long ways to go, but I’m working at it.  I’ll keep you posted on how it goes!  Here are some links that have a lot of really good ideas:
